Cashew Coffee Cake Bars Recipe




These tasty Cashew Coffee Cake Bars are quite simple and quick to make.

I was inspired for these by a snack bar we got at one of the rare bakeries here in Thailand.

They consist of a soft raisin coffee cake base with a sweet and crunchy cashew nut brown sugar topping.

Here is what you need:

3/4 cup all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1/2 cup raisins

Topping:
1/2 cup chopped cashews (can be natural or salted)
1/4 cup packed brown sugar
2 tablespoons butter, melted
4-1/2 teaspoons heavy whipping cream
